INGREDIENTS:
2 Medium juicy organic tomatoes
1 English cucumber, partially peeled making stripes
1 medium red onion
1 cup parsley
10-14 Greek Kalamata olives
Salt to taste
3-4 tablespoons extra virgin olive oil
1 freshly squeezed lemon juice
½ cup Greek feta cheese
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon black pepper
DIRECTIONS:
First for dressing we will add olive oil in a glass bowl and add lemon juice, dried oregano, dried basil, salt, and black pepper. Whisk everything and keep aside. Cut the tomatoes into large chunks. Peeled cucumber in slices into thick halves. Cut the red onion in half and thinly slice into half moons. Chopped the parsley, and now place everything in a large salad dish. Add kalamata olives and feta cheese on top. Give everything a very gentle toss to mix while adding your dressing. Serve with any dish.
