Habichuelas Coloradas con Arroz Red Kidney Beans with Rice Spanish Recipe
Ingredients:
1/2 cup sofrito
1 cup chopped tomatoes
3 cups long grain white rice
2 tablespoons tomato paste
1 tablespoon cumin powder
1/4 teaspoon curry powder
1 tablespoon paprika (Pimentón de la Vera)
Salt to taste
4 cups water
1 can kidney beans rinsed and drained
1 chicken cube
3 tablespoons Manzanilla or Spanish pimento stuffed olives
Oil
Directions:
In a saucepan over medium heat add oil, sofrito, chicken cube, tomatoes, tomato paste, olives, kidney beans, powdered spices, water, and add rice and stir until coated about 1 minute. Bring to boil and reduce heat to low and cover until rice is tender and liquid is absorbed about 15-20 minutes. Transfer rice to bowl and serve hot.
