Stuffed Bell Peppers with Ground Meat & Rice Recipe


2  bell peppers

1/2 cup ground meat

1cup onion chopped

3 cloves finely chopped garlic

1 cup cooked long grain rice

1 teaspoon salt

1 teaspoon black pepper

1/4 cup mixed cheese

2 tablespoons butter

2 tablespoons oil


Wash bell peppers thoroughly. Cut off the tops of green peppers and discard seeds and membranes. Chop enough of the tops to make 1/4 cup and set aside. In a pan add butter, oil, garlic, onions, cook ground beef till meat is browned. Add salt and pepper and cooked rice and mix well, and vegetables are tender. Cool meat mixture for 10 minutes. Stuff peppers with meat mixture. Place it in a baking dish and bake in a 350 degree oven for 30 minutes. In the last 2 minutes sprinkle cheese to the top of the peppers and broil. Serve hot with salad.
