Ingredients
2 potatoes diced
1 green onion
1/2 cup chopped tomatoes
1 cup sliced mushrooms
2 tablespoons olive oil
2 tablespoons butter
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper or to taste
Directions
In a pan add butter, potatoes with some salt and cook for 2 minutes. After 2 minutes add white part green onions, black pepper, mushrooms, and oil. Cook for 2 more minutes and toss in tomatoes and rest of the green onions. Cook until potatoes are tender and then serve hot.
