Lo Bak Go Chinese Turnip Cakes Mochi Daikon Raddish Recipe
1/2 daikon radish grated
2 tablespoons vegetable oil
5-6 dried shrimp washed, soaked and finely chopped
4-5 dried Chinese black mushrooms washed, soaked, and finely chopped
1 stalk scallion chopped
1 cup rice flour
1 tablespoon cornstarch
½ teaspoon salt
Grate the daikon on the largest holes on grater. Heat your pan over medium heat and add two tablespoons oil. Add the dried shrimp, mushrooms and cook for about 5 minutes. In a bowl of gated daikon, add chopped scallions, rice flour, salt, and shrimp mushrooms cooked mixture. Mix well until the dry ingredients are well incorporated.
Take 2 tablespoon of daikon batter and turn them into cake shape before frying. Add a couple tablespoons oil to a nonstick pan over medium heat. Fry the cakes on one side, then cover and fry the other side until golden and crispy. Serve with soy sauce and chili sauce on the side.
