Bitter Melon Veggie Mix Karele ki Sabzi Recipe


4-5 medium Bitter Gourds (Karele)

Salt to taste (namak)

2 teaspoons coriander powder (dhania powder)

1 teaspoon dry mango powder (amchur)

1 teaspoon cumin seeds (zeera)

1 teaspoon red chilli powder (lal mirch)

1/2 teaspoon turmeric powder (haldi)

2 medium tomato diced (tamater)

3 tablespoon Oil (teal)

2 medium Onions sliced (pyaz)

1 tablespoon minced ginger (adrak)

1 tabelspoon minced garlic (lehsan)

1 cup chopped cilantro (sabz dhania)

2-3 green chillies (sabz mirch)


Scrape the bitter gourds. Slit them vertically and remove the seeds. Rub two tablespoons salt all over the bitter gourds. Set aside for two hours. Wash thoroughly and squeeze dry. Heat oil in a pan and deep fry the bitter gourds till brown. Take them out and place bitter melon on a paper towel.

In the same pan, add cumin seeds, onions, garlic, ginger and all dry spices. Sauté onions for two to three minutes and add tomatoes, fried bitter melon. Cover and cook for 5 minutes. At this point add green chillies, cilantro and mix well. Serve hot with boiled rice or bread.
