Corn Salsa with Tomato Recipe

Ingredients:

1 cup fresh corn kernels or canned corn

1/2 cup chopped fresh cilantro

1/2 cup chopped red onion

1 fresh lime juice

1/2 teaspoon salt or to taste

1/2 teaspoon black pepper or to taste

 

Directions:

If using fresh corn, bring a small pot of salted water to a boil. Add the corn and cook until tender for 4 minutes.  Drain and set aside.

Mix the corn (if using can) cilantro, tomatoes and red onion in a bowl. Stir in the the lime juice, black pepper and 1/2 teaspoon salt or to taste. Serve with tacos, tostadas, enchiladas or with chips.
