Chickpeas Beans & Spinach Cheese Enchiladas Recipe


1 tablespoon vegetable oil

1 cup chopped onion (1 medium)
2 cloves garlic chopped
1 cup tomato puree
1 teaspoon ground cumin
1 teaspoon taco spices
1 cup chopped spinach
1 can chickpeas
2 cups shredded Monterey Jack cheese
4 tortillas
1 can enchilada sauce
1/2 cup sliced black olives
1 cup chopped cilantro
Salt & Pepper to taste


Heat oven to 350°F. In a skillet, heat oil over medium heat. Add garlic, onions, chickpeas, cumin, taco spice, salt, black pepper, cook and stir 4 to 5 minutes or until chickpeas are tender. Smash some of the chickpeas and then add tomato puree, spinach and cover for 5 minutes.

Pour enchilada sauce in the baking tray. Place some cheese, olives and 3 tablespoon or as desire bean mixture along center of each tortilla with some cheese on top. fold tortilla from both side and place it in baking dish. Repeat steps and make as many tortillas and place them in the baking tray. Pour enchilada sauce over enchiladas, spreading to coat all tortillas. Sprinkle with remaining cheese, olives and cilantro leaves.

Bake 25 to 30 minutes or until cheese is melted and sauce is bubbly around edges. Garnish with remaining ingredients and serve hot.
