Spicy Tofu Veggies Spaghetti Stir Fry Recipe

Ingredients:

1 box thin spaghetti

2 tablespoons olive oil

1 teaspoon sesame oil

1 cup mushrooms sliced

1 onion chopped

4 cloves garlic finely chopped

2 tablespoons chopped green onions

1 cup carrot sliced

1 cup chopped bok choy

1 container tofu cut in cubes

1 teaspoon red crush pepper flakes

Salt to taste

1/2 teaspoon fresh ground black pepper

1 tablespoon hoisin sauce

2 tablespoon soy sauce

1/4 cup vegetable broth

Directions:

Cut tofu in cubes and then sprinkle salt and black pepper on both side. In a wok heat olive oil and then fry tofu until lightly browned on all sides. Take tofu cubes out and set asideIn the same wok add garlic and onions. Sauté for 2 minutes, add green onions and carrot. Add sesame oil, mushrooms, mix well and then add soy sauce, hoisin sauce, vegetable broth and bok choy. Cook till vegetables softened a bit. Toss in crush red peppers, salt and black pepper to taste. Add spaghetti to the veggies and mix well. Serve hot with tofu and garnish with green onions.
