Bitter Melon with Potatoes Karela Aloo Recipe


Bitter melon (Karela)

3 Potatoes (aloo)

2 tomatoes diced (tamater)

1 long green pepper (sabz mirch)

1 tablespoon minced ginger (adrak)

2 tablespoon sliced garlic (lehsan)

1 cup sliced onions (pyaz)

Salt to taste (namak)

1 teaspoon red chili powder (lal mirch)

1/2 teaspoon turmeric powder (Haldi)

1 tablespoon coriander powder (dhania)

1/2 teaspoon cumin powder (zeera powder)

1 tablespoon cumin seeds (zeera)

Oil (teal)



First slice the bitter melon in thin slices. Sprinkle salt and after 30 minutes to an hour squeeze bitter melon to take all the water out. Add oil to a deep pan and add sliced bitter melon and fry until light brown and take it out on a paper towel on a plate and set aside.

Take the extra oil out from the pan and add cumin seeds, ginger, garlic, onions and saute for 5 minutes. After 5 minutes add potatoes, dry spices, tomatoes, green peppers and mix well. Cover and cook until tomatoes are soften and then add bitter melon to the pan and mix. Cook for another 5- 10 minutes and then turn off the heat. Serves bitter melon hot with rice or bread.
