Vegan Turnips with Spinach Shaljam Palak Sabzi Recipe
Ingredients:
2 turnips peeled diced
1 medium onion chopped
2 tomatoes chopped
1 bunch of spinach washed chopped
1/2 long green pepper or 2 green peppers
1/2 teaspoon cumin powder
1/2 teaspoon red chili or cayanne powder
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1 teaspoon salt or to taste
1 tablespoon ginger paste
1 tablespoon garlic paste
Olive oil
Cilantro
Directions:
Close the pressure cooker with the cubed Turnips and water and bring to maximum pressure on high heat. Now, reduce the heat and cook on low heat for about 15 minutes. Open the cooker after all the steam has escaped. Or microwave on High for 5 mins, taking out every 1 minute to stir. Drain the boiled Turnips and keep aside.
Heat oil on a high flame in a cooking pot. Saute onions till it changes color slightly for 2 minutes on a medium flame. Add the ginger and garlic paste for a minute. Add chopped tomatoes, increase to a medium flame and stir occasionally. Add the spice mix, reduce to slow flame and stir well for a minute. Mix in the turnips and cover and cook untill done.
Now add spinach and cook for 4 minutes on a slow flame. Sprinkle chopped cilantro and serve hot with rice and bread.
