Baked Parmesan & Rosemary Potato Cubes
  • 3-5 potatoes cut in cubes
  • 2  tablespoons rosemary
  • 3 tablespoons olive oil
  • ½ teaspoon salt or to taste
  • 1 teaspoon black pepper
  • 2 tablespoon parmesan powder
  • 5 tablespoons freshly grated parmesan cheese
Preheat the oven to 450°F. Spray a baking sheet liberally with cooking spray or use a foiling paper on the sheet. Clean the potatoes and remove any blemishes and cut the potatoes into similar size cubes. Add to a mixing bowl with the remaining ingredients, reserving freshly Parmesan for garnishing.
Now add the mixture on top of the potato cubes and massage the cubes evenly. Bake for 30-35 minutes and check with a fork to see if it is tender. Turn halfway through cooking for even browning. Remove from the oven and grate freshly grated Parmesan cheese and leave in the oven for another 5 minutes or until cheese is melted.  Remove from oven and serve hot with any meat dishes.
