Cauliflower Crust Pizza with Spinach Mushrooms Cherry Tomatoes

  • 1 head cauliflower
  • 2 cup shredded cheese
  • 1/2 teaspoon dried oregano
  • 1 tablespoon garlic minced 
  • 1 tablespoon ginger minced
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon ground black pepper 
  • 1/2 cup marinara sauce 
  • 1 cup cherry tomatoes, spinach & mushrooms

Directions:

Preheat to 475 F degrees. Wash cauliflower florets thoroughly. Add the cauliflower to a food processor and pulse until finely ground about the consistency of couscous. Pour the cauliflower onto pan to dry out the extra moisture or you can use a towel.

To a large bowl, add the cauliflower, cheese, oregano, ginger, garlic, salt, some black pepper. Mix until the mixture holds together and then spread it on a baking sheet.

Use a wax paper on baking sheet this will prevent sticking. Bake until the cauliflower crust is barely golden and darker at the edges about 20 minutes.Remove the crust from the oven, spread the marinara sauce over the top and cheese, spinach, tomatoes and mushrooms. Slide the pizza back into oven and cook for another 5 minutes or until veggies are tender. Serve hot.
