Adas Polo Persian Rice With Lentils


  • 12 cups lentils soaked
  • 2 cups rice
  • 2 onions sliced thinly
  • Salt to taste
  • 1 teaspoon black pepper
  • 1⁄2 teaspoon cumin
  • 1teaspoon saffron or food color
  • 1/4 cup raisins
  • 1 cup dates
  • Oil
  • Water


In a large saucepan add soaked lentils. salt, black pepper and salt. Bring water to a boil, cover and cook for 30 minutes or until lentils are tender. Drain water from lentils and set aside.

In a pan add 1 cup water and dates to make them tender. cook for 2 minutes and drain dates. Add oil to dates and then add raisins. Saute for 2 minutes and set aside. In the same pan add sliced onions and cook until light brown. Set aside.

In a large pot add water and bring it to boil. Once water starts boiling add soaked rice and cook for 10 minutes and drain rice. In a bowl add layer of rice and layer of lentils and mix. In a separate bowl add rest of the rice and saffron or food color.

In a baking dish layer mix lentils rice, color rice, dates & raisin mixture. Bake rice for 20 mintues or until rice is cooked. Serve hot with with mast o khiar and salad shirazi.
