Mushroom Spinach Vegan Veggie Mix Recipe
Ingredients:
1/2 teaspoon cumin
Salt to taste
1/2 teaspoon black pepper
1/2 lime juice
1 tomato sliced or chopped
1/2 onion chopped
1 cup mushrooms
1 cup frozen spinach or fresh
2 tablespoons olive oil
Directions:
First chop all veggies and then add oil to the pan. Then add onions and saute for 3 minutes and add tomatoes, mushrooms and cook for 3-5 minutes.
Now add spinach, lime juice and all the spices. Cook until all the moisture evaporate and is pretty much dry. Serve hot on the side of steak or any meat dish or if you are vegan serve with some bread or naan.
