Bottle Gourd (Lauki, Ghiya, Dudhi)
Ingredients:
1 large bottle gourd (cut into cubes)
3 ripe tomato chopped
1 teaspoon cumin seeds
5 dry red chilies
5-7 black peppercorns
4 cloves
1 tablespoon coriander powder
½ teaspoon red chili powder
½ teaspoon turmeric powder
¼ teaspoon cumin powder
1 chicken cubes
1 cup chopped onions
¼ cup fenugreek leaves
5-6 chopped garlic cloves
1 tablespoon ginger paste
Salt or to your taste
Oil
Directions:
Wash the bottle gourd and chop off the top and bottom tip and cut it into small pieces.
On medium high heat add 3 tablespoon oil to the pan and cumin seeds, black peppercorns, cloves, and dry red chilies. Add the onions, garlic, ginger paster and cook for 5 minutes.
After 5 minutes add the bottle gourd cubes, dry spices, tomatoes, cover and cook. cook for 45 minutes and then add the fenugreek leaves. Cover and cook for another 2 minutes and then serve hot with bread or rice.
