Turkey BBQ Pulled Pocket Sandwich
Ingredients:
2 cups of shredded or chopped turkey (leftover or cooked turkey)
1 cup shredded cabagge
1/2 cup shredded carrots
3 tablespoon mayonnaise
1 tablespoon french mustard
1 cucumber chopped in small pieces
1 large pocket pita bread
3 tablespoons sweet relish
1/4 teaspoon black pepper
Salt to taste
3 tablespoons ketchup
3 tablespoons bbq sauce
2 tablespoons buffalo wing sauce
Directions:
First wash and shred all the veggies and cut the cucumber. Then make sure you shred or chop the turkey. In a pan add turkey, ketchup, bbq sauce, buffalo sauce and cook until turkey is glazed nicely for 10 minutes.
In a bowl add shredded cabbage, carrots and relish and mix well. In a separate bowl add mayonnaise, french mustard, black pepper and salt and combine everything.
Now cut the pita in half and open the pocket spread the mayo all over the inside. Now add cabbage and carrots and then add cucumber with turkey on top. Serve hot with some salad.
