Bake Hasselback Sweet Potato with Rosemary Recipe
2 medium sweet potatoes
1 tablespoon olive oil
1 teaspoon finely chopped rosemary leaves/ dry
¼ teaspoon cayenne pepper
½ teaspoon black pepper
¼ teaspoon coriander powder
Salt to taste
Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil. Make a series of slices along each sweet potato, slicing 2/3 of the way through.
Rub olive oil to sweet potatoes generously. Sprinkle salt, cayenne pepper, black pepper, rosemary leaves, and coriander powder. Rub the potatoes all over with the spices, getting in between the slices.
Place on the baking sheet and roast until the center of the potatoes are tender and the outside is crisp, 40 minutes to 1 hour. After 40 minutes check to make sure potatoes are cooked if not then wait another 15 to 20 minutes. Once cooked take them out and serve with dip or as is.
