Moroccan Green Fava Bean Recipe
1/2 pound fresh fava beans
1 tomato finely chopped
1 cup finely chopped cilantro
1/4 cup olive oil
3 garlic cloves crushed
1 teaspoon of salt or to taste
1/2 teaspoon red pepper
1/4 teaspoon cumin
1 preserved (fermented) lemon
Peel all the fava beans and discard the skins. If you find large fava beans, slice the head with a pairing knife so that it can absorb the spices when cooked. In a saucepan add water and then fava beans, tomatoes, garlic, lemon, spices, and cover to cook fava beans. After 20 minutes add oil to the fava beans and cover for another 20 minutes or until water is dried.
Stir in the cilantro to fava beans. Once the fava beans are cooked, then cook for 2 minutes uncovered.
Serve the fava beans hot with Moroccan or French bread.
