Easy Onions Tomatoes Mushrooms Omelette
Beat eggs in a small bowl. Mix in onions, tomatoes, mushrooms salt and pepper. Mix well to blend eggs and veggies together. Heat oil in a large skillet over low to medium heat and add eggs mixture. Cook one side for 2-3 minutes and then lift edges letting uncooked portion flow underneath. Flip the egg on the other side and cook until egg mixture sets for 5 minutes. Serve immediately with toast.
