Stuffed Eggplant with Masala Bhare Hoye Bhaigan Recipe


8-10 small eggplant

1 onions chopped

1/2 onion finely minced

1 tablespoon sliced garlic

2-4 green peppers

3 tomatoes chopped

1 tablespoon ginger paste

1/2 teaspoon chili powder

Salt to taste

1 tablespoon chat masala

1/2 teaspoon turmeric

1/2 teaspoon garam masla

1 tablespoon coriander powder

2-4 dried chillies

2-5  curry leaves.


First take very finely minced onion and add chili powder, salt and chaat masala to it. Then slit the eggplant in the middle but don’t cut it all the way and stuff your onion stuffing in there and tie it with some thread. After all the eggplants are done then deep fried them for about 5 minutes and take them on a paper towel so it absorbs the extra oil.For gravy:

 Saute your onions until they are translucent then add your garlic and ginger paste. Make sure your garlic is sliced not paste. Cook for few minutes and then add your dry spices and cook for extra few minutes add your tomatoes while you add your tomatoes you could add your eggplant as well and cover it with lid for 4 minutes. Then add some water and cover it for about 7 to 10 minutes until the eggplant and onions mixture has mix together. Garnish with some cilantro or green peppers and some garam masala.
