Hummus without Garlic
2 canned chickpeas or 2 cups cooked chickpeas
1/2 cup tahini (sesame paste)
1/2 cup extra virgin olive oil
1/4 cup chickpeas reserved water
Salt to taste
Black pepper to taste
paprika sprinkling for garnish
1 lemon juice freshly squeezed
Parsley leaves for garnish
First in a blender add tahini paste with lemon juice and blend both ingredients become one. Now add the extra virgin olive oil and blend once again, add the chickpeas to the blender. Blend into a smooth paste or as desire texture.
Add salt per taste, black pepper per taste and now add the chickpeas water and blend until is as thick as you desire the paste to be in constancy. Sprinkle some olive olive, paprika and garnish it with parsley leaves and serve right away or refrigerate it until you are ready to serve.
